Easy Summer Meals to Make When Traveling
If you’re anything like me, you love routine. I’m a spontaneous soul but a planner/budgeter at heart. That’s not to say I never go out to eat, but 75% of my meals are created with my own hands. Which is why I’m sharing this super fun post today! Highlighting a few Easy Summer Meals to Make When Traveling!
Now, to be clear, I love going out for a nice fancy dinner. I’m a sucker for a hot dog at a ball game or a glass of wine on a rooftop patio.. and, yes! Patisseries in France. However, there is something to be said for indulging in the local delicacies at home and going out to eat sparingly. Plus, I find my meal to be more enjoyable when I go out sparingly.
With that all said… let’s get into these sumptuous recipes!
Easy Summer Meals to Make When Traveling
If there is one piece of advice that I can give: buy all produce and perishables as local as possible.
So, you’re traveling to another city… how amazing would it be to instead of grabbing your french bread from a Safeway or Kroger, you instead go to the bakery? In fact, why not try to find the closest mom and pops shop to see what neighborhood vendors they work with? I, personally, prefer to go to the community farmer’s market first and the buy everything else at the grocery store.
Breakfast
Yogurt, Berries & Honey – I love getting goat yogurt and adding local honey and berries. My french cousins always add local jam to theirs (to control the sugar contents). It’s so yummy. 10/10 recommend. 😉
Peach Cobbler Oatmeal by Spoonful of Flavor – There is literally nothing better than cobbler… except, mayne, cobbler OATMEAL. Go crazy and use other berries. This is also really good with sweet potatoes in the Fall/Winter. Really easy to make on the road and, especially, in an airbnb.
Goat Cheese Toast with Peaches or Strawberries (similar) – This is a staple breakfast at home for me and also on the road. I love goat cheese, particularly on Marcina Bakery’s Greek Olive Baguette. YUM! I promise you, local bread is the best bread.
Lunch
Avocado Bruschetta Toast (similar) – Again, another staple for me. I will often make this as a snack. If I’m out of avocados, I just add more tomatoes. 😊 The key is getting super tasty bread and buttering your toast before popping it into the oven. I love using a herbed baguette for this, notably at Thanksgiving as an app.
Watermelon Poke Bowls by Erin McDowell – Quick and easy bowl that require zero cooking. Just assembly. I love simple vegetarian meals like this on the road. They’re fantastic to pack up for a picnic at the park or your airbnb’s backyard with a beautiful glass of rosé.
Strawberry Herb Summer Salad by Me! – The easiest recipe ever!
Combine: - herbed lettuce - goat cheese - sliced strawberries - a nutty ingredient (like flax seeds, candied walnuts, etc.) - drizzle a fig balsamic dressing or just olive oil and vin. I love to add fresh thyme to mine. You can also add a protein if you'd like or enjoy as it.
Dinner
Sheet-Pan Persian Lemon Chicken by Allison Day – One sheet meals are my favorite. I don’t like a lot of fuss when I’m traveling and I also love an easy clean up. This one is perfect for that and you get a healthy and hearty meal for dinner.
Caprese Pasta Salad by Maria Lichty – A fantastic side dish for the family or a whole meal for you. I don’t do cow’s cheese so I tend to sub the bocconcini with goat cheese or a vegan cheese (if I can find one). This is super tasty and if you need more protein, it’s easy to add chicken or use a lentil based pasta.
Honey-Lime Chicken & Veggies in Foil by Erin McDowell – Again, the easier the clean up, the better. I LOVE how you can cook this in either an oven or a grill. Tasty and very easy to make into tacos too because the chicken can pull a part. Kids will love this tin-foil meal.
Dessert
Classic Strawberry Galette by Anna Banana – My french cousin made an apple galette (see above) when I was visiting them in Paris (post here). It was so good that I quickly researched recipes on how to make them myself. This one is perfect and effortless in Spring while traveling about. If you’re not into making your own dough, pick up some frozen phyllo dough and you are SET. World’s easiest dessert.
