English Muffin Egg Breakfast Sandwich


Hello darling friends! As you guys, I’m single and living in the city. I’m a budget kind of woman and I stick to it! This means, meal prepping and eating to watch my waistline and my wallet. They’re equally important to me. Which is why today’s Tasty Tuesday recipe is the easiest and affordable English Muffin Egg Breakfast Sandwich.

Two weeks ago, I shared my Homemade Vegan English Muffins recipe. It created a LOT of muffins, about 24 to be exact. Arguably too many for one person. Haha! 😅 However, they freeze very nicely and you can half the recipe. (Something I noted for next time.)

What was I saying? Ah! I had so many muffins that I decided to make my staple English Muffin Egg Breakfast Sandwich. I’d like to note that even if you were to pick up a bag/box of english muffins from the grocery store, this would still come out to be a pretty inexpensive breakfast. The basic breakout is less than a dollar.

You can easily add more protein to this sandwich by adding a second egg or even bacon and sausage. I’ve cut out meat (for the most part) while we’ve been under this pandemic so mine just has a simple egg. The most complicated part of this recipe is honestly the red pepper aioli… which is still super easy! (see second recipe below)

English Muffin Egg Breakfast Sandwich

This super easy and affordable sandwich is great to grab on the go or make for a family breakfast. Add more protein, calcium and fat with items like: cheese, bacon, sausage, ham, avocado, etc. Shockingly easy if you make my Vegan English Muffins ahead of time.

Equipment

  • Frying Pan

Ingredients

  • 1 tbsp olive oil
  • 1 egg
  • 1 english muffin
  • 1/2 handful spinach
  • 1 tbsp red pepper aioli (see below for recipe)

Instructions

  • Start by adding the olive oil in your frying pan. This part is actually kind of important, make sure your pan is on medium-low because you don't want to over fry your egg.
  • While you're slowly cooking your egg, heat your english muffin up in the oven or toast it.
  • Once your egg is fried up and your muffin is heated/toasted, assemble your sandwich with spinach and aioli. Add whatever other fixin's you'd like. Easier than pie. 😉

Ingredients

  • 1 cup mayonnaise I use vegan mayo
  • 2 tbsp milk alternative
  • 1/2 tsp red pepper powder
  • 1/4 tsp garlic powder
  • 1/4 tsp pepper
  • salt to taste

Instructions

  • Mix together and store in the fridge.
