Easiest Vegan Minestrone Soup (Instant Pot)
Hello my dear friends! In the spirit of budgeting, saving money and eating healthy, I’m posting this recipe because it’s also the easiest vegan minestrone soup you’ll ever make! Like, really though. I’m not just saying that. You’re gonna be amazed.
There are numerous reasons why I make this easiest vegan minestrone soup:
- It’s packed with vitamins from veggies
- Has protein
- It’s hearty and comforting (vital right now)
- Has minimal carbs (and they’re replaceable)
- It’s delicious and only about 30 minutes to make
- It feeds 4-6 people/4-6 meals or side dishes
- It’s easy to freeze
As always, guys, I try really hard to make sure I am eating super duper healthy. Even more so during this time in our lives. I’m just pumping myself full of nutrients to boost my immunity. This soup does that.
There are a lot of other variations for this soup. I also love adding zucchini when I have it. If you want even more immunity, replace spinach with kale (it has double the vitamin C). Heres a great article on the differences: kale vs spinach.
If you’re also hoping to substitute out the pasta due to gluten or just carbs in general, I recommend using russet or even sweet potatoes (very high in vitamin A). Turnips are a bit out of season but also used as an opt out. Keep in mind, if you pull the pasta, this is just veggie soup. Haha. 😂
Additionally, if your stomach is sensitive to beans you can sub with lentils, peas or even corn. Alrighty, friends, enough subs. I’d love to know if you’re enjoying this Tasty Tuesdays Series. Easiest Vegan Minestrone Soup (Instant Pot)
Equipment
- Instant Pot
- Stove Pot
Ingredients
- 1 cup onion, chopped
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 2-3 cloves garlic, rough chop
- 1 cup white mushrooms, halved
- 1 can tomato
- 1 can black beans
- 1/2 cup medium shell pasta can be subbed with russet or sweet potatoes
- 32 oz vegetable broth
- 1 Tbs olive oil
- 1-2 handfuls spinach, fresh or frozen
- Seasoning: garlic powder, oregano, a little chili powder, pepper and salt.
- Optional to add: zucchini, yellow squash, kidney beans, kale.
Instructions
Easiest Vegan Minestrone Soup Instant Pot Recipe:
- Set your instant pot on sauté. Add olive oil, garlic, onion, carrots, celery and let cook for 3-4 minutes. I like to add salt to this step because it carries through out the recipe.
- Add mushrooms and let cook for another 2 minutes.
- Next, Add canned tomatoes, black beans, shell pasta and broth to the instant pot.
- Then go crazy on your spices. I like to add garlic powder, oregano, a little chili powder and a normal amount of… pepper (okay a little more than normal).
- Turn off your instant pot and then click on “soup”. Add 20 minutes to the timer. Let cook!
- When done, release the valve. Open the lid and add your spinach. Taste and see if the soup needs more salt. Serve up and enjoy! Easy, right?
Easiest Vegan Minestrone Soup Stove Top Recipe
- Instead of using your instant pot, make everything in your dutch oven or stove pot.
- All you need to do is follow the recipe above BUT instead of adding in the pasta to your soup, cook the pasta in the separate pot.
- I like to cook my soup on medium low for about 20-30 minutes and add the cooked pasta and spinach at the end.
