In the Kitchen: A Simple Caprese Salad to Make Before Summer Ends
As the leaves start to change and the heat slowly drops I know summer is coming to an end, but that isn’t going to stop us from soaking up every last moment before the autumn rain arrives. Now that we don’t have family staying with us or anything pressing on the calendar, we’re looking forward to getting back into our routine and cooking from scratch again.
Last week I went on a full sourdough rampage and made four loaves of bread, a stack of blueberry sourdough pancakes, and I still need to make sourdough discard crackers. We are fully in meal prep mode and one of the easiest and most refreshing lunches we’ve been making is a caprese salad.
I regret to share that this one isn’t 100% homegrown just yet. Our tomatoes are only now starting to ripen but the basil is straight from our garden! Maybe next year everything will be ready at the same time. Either way, I genuinely don’t know how I keep forgetting about this salad because it takes about three minutes to make and it’s absolutely perfect. We use Costco’s Buffalo Mozzarella and I cannot get enough of it.
Assemble
- Bufala Mozzarella, imported from Italy
- 2 hearty Roma tomatoes
- Fresh basil from the garden 🌿
- A drizzle of olive oil
- A drizzle of balsamic glaze
- A dash of salt and pepper
- A beautiful serving plate
That’s it. Completely painless and endlessly satisfying.
