This year, I’ve set myself a personal cottagecore mission: learning the art of canning.
After all, what better way to embrace the unhurried pace of cottagecore living than by preservation?? Picture me pickling, simmering broths, and crafting my very own pumpkin pure! GAH!

1. Stuffed Acorn Squash
There are so many wondrous recipes for stuffed squash but my favorite is acorn. I’m adding two recipes below, one vegetarian and one for meat lovers. I have made both and I can’t wait to prep these for dinner again.
I don’t know about you but I love acorn squash so much that I’ll eat it for dessert in Autumn. I bake it and then drizzle honey and cinnamon and *chef kiss*!

2. Apple Butter
Is there anything more enchanting than homemade Apple Butter? Straight from the heart of a cozy cottage kitchen!?
No. There isn’t.
It’s the best gift and also screams Autumn to me. I get so excited to open a jar every year from the charming farmer’s stand on I-90.
This year though, it’s my year! I’m def learning to make these from scratch and learn how to can them to gift to friends and family. I love it on toast, English muffins, and a tablespoon in my goat yogurt starting September 1st. 🍂🍎✨

3. One Pan Autumn Chicken Dinner
I’m a big fan of cooking classy and almost all of her chicken recipes. Another confession, I don’t like touching meat. Especially chicken. The thought stresses my cottagecore heart. I’m petrified of salmonella!
That said, this is a delightful recipe that allows me to keep my hands clean and wield my trusty tongs throughout the entire cooking adventure. It’s the perfect solution to my poultry aversions! 🍗✨🌼

4. Autumn Minestrone Soup
Again, Cooking Classy holds a lot of my staple meals so it’s no surprise she has my favorite soup but autumnal. I’ve made this once before and loved it. It freezes beautifully and is absolutely sumptuous on perfectly chilly evenings cozied up by the fire with Gilmore Girls on in the background.

5. Chai Scones with Maple Chai Glaze
Chai is a spice that I’d like to experiment with more. I adore the flavor in tea but I’ve never been adventurous enough to experiment with it in baking. This is why I’m adding this to my TBB (to be baked) listed this Fall!
This would be a fan favorite for my family come the holiday season. Though packed with all things wonderful and dairy, alas, I can’t have them. So I’m looking for a substitute if any of you know of one!
In the meantime, I’m adding a Starbucks vegan copycat pumpkin scone for those who are more garden-friendly.

This, my dear friends, is no ordinary sweet potato casserole; it’s a celebration of well-being for my little naturalist soul.

Straight from my recipe box! This one I use this all year round but it’s exceptionally tasty in autumn due. to the flavors and how well it goes with Fall side dishes.
It’s simple, easy, and very inexpensive when done right. I have often found 12 chicken drumsticks for $2.50 at Safeway. I love to heat these up for lunches.

9. Downeast Maine Pumpkin Bread
Another one that. I make it every year and cannot wait to dig my fork into it! This one is an almost exact replica of Starbucks’ infamous pumpkin loaf. It’s delectable and moist but word to the wise, 3 cups of sugar is a lot and it’s understandable if you cut it. Just remember that the recipe makes 2 whole loaves so it’s not that bad. 😋 🍞

10. Roasted Chickpea Fall Salad
Finally, this last one is going to keep me healthy and happy this Autumn. Cold salads tend to lose their appeal during this season but, I think I’ve discovered a solution – a rustic, nourishing salad packed with hearty kale, crunchy pepitas, earthy walnuts, glistening pomegranate arils, sweet dried cranberries, and chickpeas roasted to golden perfection with oil, turmeric, cumin, and cinnamon!
To top it, it’s drizzled with a divine Apple Cider Vinaigrette that elevates it to a new realm of flavor. It’s a recipe that promises to keep me healthy and content throughout the season. 🥗🍁🍎
