Summer Recipes I’m Loving Right Now
I’ve started this post so many times. I couldn’t decide if I wanted to simply share these recipes or write out my weekly meal plans. Either way, I want to share these Summer Recipes I’m Loving Right Now so that others can enjoy them too!
Alsooo, because I’m back on a meal plan/grocery budget. Yikes.
This is primarily due to overspending but, also, inflation! I’ve been trying to scale back my bad spending habits and hone in on a respectable food budget.
Let’s get into these. I’m pretty excited!
Summer Recipes I’m Loving Right Now
Each of these recipes I’ve already tried and I love them. Like, LOVE them, love them. So much so, that I’ve made them multiple times and I want everyone I know to try them. It’s a problem. Hence why I’m posting about it. 😅
Anyway, I’m loving sweet and savory early summer morning breakfasts right now. They’re perfect with my tea. The light and hearty lunches & dinners are a savior during the day. Each is interchangeable, which helps me mix it up so I won’t get bored.
On to the recipes!
Strawberry Compote or Fig Jam Oatmeal Bars
I found this recipe while searching for savory and inexpensive breakfasts when I got sick of eggs. This happens a lot. I’ll go through an egg phase. I’ll eat them every day for a month and a half. Then just stop. Cold turkey.
I’ll add the OG recipe below. I changed the name because the recipe asks for raspberry jam. I didn’t have that but I had a fresh batch of strawberry compote from the day before. So, I used that instead. Holy freakin’ moley, it was SO GOOD. The second batch was made with Fig Jam. Highly recommend as well!

Portobello Mushroom Fajitas
Listen, I don’t want anything super heavy in the summertime and these fajitas totally delivered. If you’re not a mushroom fan, you can always use tofu or zucchini! They are tasty and great for if you have friends over.

Summer Vegetable Pasta Salad
I became a true fan of Budget Byte’s blog after this recipe. This is the one that made me question my whole life and wonder why I don’t eat pasta salads all the time! I love this dish. It’s packed full of garden veggies and tossed with a light but flavorful vinaigrette. 10/10 recommend this one.
I subbed the tomatoes with black olives and, I’ll die on this hill. It made it even better.

Cucumber Sandwiches with Microgreens
I wish I could tell you where I found the recipe for this one but it’s the easiest thing in the world. Here’s how I make mine:
- Two slices of bread
- Trader Joe’s vegan cream cheese (generous amount)
- Slices cucumbers (thin or thick)
- Thin layer of mustard
- Generous handful of microgreens
This doesn’t last a minute before I’m biting into it. I would have loved to add avocados or sweet tomatoes but they were both expensive so I skipped them. You could also add spinach, lemon juice, or fresh mozzarella!
Vegan Potato Soup
I know what you’re thinking… this sounds like a Fall/Winter thing. I say it’s an all-year-round thing. Cause, on a chilly summer night? You know. When you’re wearing shorts and finally put on your sweatshirt because it’s so breezy and cold, but you’re stubborn??
That’s when you want soup! This soup shocked me for so many reasons. To start, it’s packed with veggies. Zero vegan cheese is required. Plus, it’s so creamy and full of flavor I could have died. This is by far the best vegan potato soup I’ve ever had.
Word to the wise, I skipped the veggie broth. I was out. So, I used 2 chicken bouillon cubes. So, technically, mine wasn’t vegan. But, I’d do it again!! It was soooo good.

Easy Vegetable Stir Fry
Friends… this really is easy. Not to mention filling, versatile and delicious. I’ve made this so many times over the past three weeks. I swear by it.

I was really terrible about taking pictures of each of these but I’ll try and do better next time. I fully plan to make that potato soup throughout all of Fall so maybe I’ll get a good pic then.
