Breakfast Burritos on a Budget
Hello darlings, it’s me again! I can’t believe I’ve made such a switch up since this whole thing started but I feel as if more of you need low-cost friendly recipes/meals than you do lounge/fashion these days. Trust me, so do I. So this that said, I bring to you the ever versatile quick and easy Breakfast Burritos on a budget.
This recipe can NOT be any easier and you can mix it up a lot. The key to getting it right though is to pack it with loads of protein and greens. As you know, I am a pretty health conscious. In fact, my friend called me “insanely active” the other day. I’m not very good at sitting indoors and in isolation so you can imagine how crazy this is for me these days.
Back to loading up on greens! I recommend stocking up on some greens that you intend to eat throughout the week. Truth be told, it’s going to shock you, I don’t love kale. I know! What kind of a PNWerner am I? I’m just not it’s biggest fan. So I buy kale but then I mix it into recipes to hide it from myself. Example: soups, smoothies and kitchen sink salads or Buddha bowls.
For Breakfast Burritos on a budget, I recommend grabbing some spring salad, spinach or a nice baby lettuce mix. I buy all of mine in a bag at Trader Joe’s (because it’s cost effective for me and it’s convenient). When I buy a bag, my goal is to finish the entire bag in a week. #goals, right?
Remember, I’m single and living in the city so all of my meals are for one person. However, obviously double per adult and 1/2 for children.

Equipment
- Frying Pan
- Oven at 350*
Ingredients
- 2 eggs
- 2-3 white button mushroom
- 1 tbsp olive oil
- 1 handful of greens
- 1 tbsp mayo substitutes: hummus, fried beans or just black beans!
- 1 flour tortilla substitutes: flat bread
- optional: sprinkle of goat cheese
- optional: garlic powder, basil and pepper to taste
Instructions
- Rough chop your mushrooms and throw them in a frying pan with your olive oil on medium heat.
- While your mushroom heat up, set your oven to 350* to heat up your tortilla. I put my tortilla right on the rack and right when I turn on my oven. I then set my timer for 5 minutes. (Again, you just want it warmed up)
- Once mushrooms start to shrink a bit, scramble/mix your 2 eggs in a bowl with your optional cheese, garlic powder, basil and pepper.
- Pour egg mix into pan with mushrooms and cook for about 1.5 minutes. Until they're done but not dry.
- Take your tortilla out of the oven, place on a plate.
- Add mayo/hummus/beans or multiple to the bottom center of the tortilla. Add egg mix and then greens to top.
- Fold into a burrito or eat like a taco! Enjoy 😊
