Breakfast Burritos on a budget
Packed with protien, greens and flair, this easy recipe for breakfast burritos on a budget will definitely keep you healthy, safe at home and well fed...This is arguably the simplest recipe ever BUT, here we go.

- 2 eggs
- 2-3 white button mushroom
- 1 tbsp olive oil
- 1 handful of greens
- 1 tbsp mayo substitutes: hummus, fried beans or just black beans!
- 1 flour tortilla substitutes: flat bread
- optional: sprinkle of goat cheese
- optional: garlic powder, basil and pepper to taste
Rough chop your mushrooms and throw them in a frying pan with your olive oil on medium heat.
While your mushroom heat up, set your oven to 350* to heat up your tortilla. I put my tortilla right on the rack and right when I turn on my oven. I then set my timer for 5 minutes. (Again, you just want it warmed up)
Once mushrooms start to shrink a bit, scramble/mix your 2 eggs in a bowl with your optional cheese, garlic powder, basil and pepper.
Pour egg mix into pan with mushrooms and cook for about 1.5 minutes. Until they're done but not dry.
Take your tortilla out of the oven, place on a plate.
Add mayo/hummus/beans or multiple to the bottom center of the tortilla. Add egg mix and then greens to top.
Fold into a burrito or eat like a taco! Enjoy 😊
