There is nothing I love more than making myself at home when I’m at an Airbnb. I love making myself a temporary resident of the town, cozying up on the couch, and cooking for myself. Sometimes meals can be the hardest part of planning when you’re leaving for a trip. This is why today’s post is a list of The Best Fall Recipes to Use While Traveling, this year.
We all have our staples, right? (*cough* tacossss *cough*)
My family favorites are a lot of Italian dishes, simple and (oftentimes) inexpensive… especially if there’s a grill on the premises. These recipes quickly make you feel at home. Which is why I love to mix it up when I’m away. This helps create new memories in a new place.
The Best Fall Recipes to Use While Traveling
This year, I’ve been trying to experiment more with food while traveling. I used to eat out for half my meals. With the pandemic at large, well, cooking my own meals is a lot more favorable.
These recipes I’ve experimented with (or in the middle of) during Autumn. I love the idea of testing these recipes while at a cabin in the woods or a house overlooking the sound. Especially on a rainy or snowy weekend.
Let’s get into a few of my favorites!
Pumpkin Cinnamon Rolls
Breakfast is so easy to make. Eggs, bacon, cereal, granola and yogurt… it can be the best kind of breakfast… and also the most boring. I love mixing it up with this, just as easy, Pumpkin Cinnamon Rolls.
When I say “easy” I mean a refrigerator roll of croissant and pumpkin puree. The hardest part is making the cream cheese frosting from scratch. I use dairy-free cream cheese and oat milk as a substitute.
A mere 40 minutes to a yummy Autumn breakfast! Who can say “no” to warm cinnamon rolls on the cabin porch?

Roasted Butternut Squash and Brussels sprouts with Pecans and Cranberries
Guys, this is the best side dish everrrr. I substitute the cranberries for bacon. Sorry, not sorry. I’m a savory girl! This recipe is, again, straightforward, tasty and (bonus) pretty healthy!
I’ve also made this recipe over and over again. Sometimes I swap out the butternut squash for sweet potatoes. Other times I’ve used broccoli because it’s all I had. I recommend pairing with an easy chicken breast or Thanksgiving dinner!

Autumn Minestrone Soup
This can’t be a surprise. Soup is the perfect Fall meal. It’s hearty, savory and healthy! Did I mention easy? I should have named this post “Easy Fall Recipes While Traveling”.
This soup is done in exactly 1 hour and the reason I love adding zucchini to all my soups. This one adds kale but I normally use spinach. Both are delicious but it’s really based on preference.
I love eating soup cuddled up with blankets all around me, a good movie and a roaring fireplace. I can picture it! Can you?

Cornucopia Popcorn Snack Mix
I haven’t made this recipe…. YET. It’s a work in progress!
I’m currently working on my own mix because I’m dairy-free! If you’re not, this one is for you. It’s packed with all the good stuff: buttered popcorn, nuts, pretzels, Reese’s pieces, sprinkles, candy coating, candy corn, and bugles! Mix it up and it’ll be the best snack mix for movie nights away from home.
Sometimes unique special mixes make your stay more memorable.

Shepherd’s Pie
There is something about shepherd’s pie that screams Autumn. Doesn’t it? It’s got everything you want and it’s versatile with the ingredients. For example, it can be made vegan or you can swap beef for lamb, etc.
This recipe has all the goodies and takes about an hour and a half to make. Something about mashed potatoes on top of this mix makes it such a cozy fall travel recipe.
…I might make this for myself this week.
Recipe: Shepherd’s Pie
Snickerdoodle Latte
Coffee, coffee, coffee! This recipe is literally a quick shake, a pour and you’re done. If you’re looking for a super foamy drink, go for oat milk over any other milk sub. If you’re into milk (good for you), go for 2%!
This is super travelable too. Pre-make it as a creamer and re-shake it before adding it to your coffee. Yum yum yum!
