Perfect Pumpkin Muffins

Best Pumpkin Muffin

Hello Friends and good morning! I woke up early this AM to get some chores done around the cottage and bake some muffins. Please excuse the no make up and workout gear. I’m having a “me day”. A day where I listen to myself and do everything I want to do. Number one: Make Muffins!

This past Summer I did a reflection on how I’ve been running this blog. I sat myself down and wrote every goal, as well as establish what makes my little creative outlet “successful”. One of my top goals is to work on the “Pie” portion of my creativity.

Since leaving Allrecipes (almost two years ago), I don’t cook or bake nearly as much and it’s something I miss. DEEPLY. I love creating recipes, tweaking old ones and … let’s be real, eating.

With all this said, it is officially my goal to get one, just ONE, recipe on the blog a month. Will this be a challenge I can accept? Oye, I hope so. One of my sisters recently started her own blog about baking. She’s on a far greater spiritual journey with recipes than I am. I’m taking baby steps by posting what I’m already making. To be far, I’ve already written down November’s recipe so I hope this is something you guys will enjoy as much as I’m enjoying writing about it.

May I now present: My Perfect Pumpkin Muffins.Muffin and pumpkin stand of pumpkin muffinspumpkin muffinsholding a pumpkin and a muffin

This is recipe I got while working at Allrecipes. I researched, hunted through recipe books and tested so many recipes, guys. This is the one. It’s had a 5 star review for over 4 years now. You can’t beat that kind of love! Plus, it’s a super easy to make.

The recipe is called Downeast Maine Pumpkin Bread by Laurie Bennett. It’s better then Starbuck’s Pumpkin Loaf. There! I said it. Now you’ve got to try it!

When I mentioned that this recipe is easy, I mean it would be tremendously difficult to mess it up. You simply mix all the wet ingredients together, mix the dry ingredients separately… and then mix the dry ingredients with the wet. Put it in the oven for 45 mins, if a loaf, and 20 minutes for muffins. Easy as muffins, literally!

Now, I would lie if I say “I haven’t experimented with this recipe”. I have. Therefore, I can say with confidence that you can utterly mess it up this recipe if you go rogue.  However if you stick to it and make mild tweaks, you’ll be just fine. Example: I generally replace 1/2 of the white sugar with coconut sugar. You don’t need to add the water.. at all. It doesn’t make a difference. I also never add cloves… who owns cloves? Does everyone else just have cloves in their pantry but me? I wonder this every time I read through the recipe.

This mix can make 36 muffins or 1 loaf and roughly 16 muffins. It depends on how much of the batter you eat! Below is a pic of the loaf I made for my friend’s mom. I love this recipe because it’s far too much for one person, so it’s a nice surprise to share with friends.

That’s it, friends! Thanks for stopping by and reading today. I’d love to know what your favorite autumn muffin recipe is! Feel free to share in the comments below.pumpkin loaf
