Caught Up with Food


It’s been awhile. My work has taken over my life!
Not in a bad way, don’t you worry. It’s just been a long and exhausting few months and it’s been really hard to keep up with my normal regimen. It’s calmed down a bit.
Enough for me to write a post on all of the food pictures I have on my iPhone! Bahaha. I know, but you know what? I really love taking pictures of food I end up making. Good or semi-good. Nothing is ever bad. If it were, I’d take a picture and tell you about it and what not to do.

Scrambled eggs with bacon, brussel sprouts, pecans and flax seeds.

Steak and Avocado salad. One of the best salads I’ve ever made! Steak was medium well. The Avocado was perfection and the dressing was homemade and mayo based. In short, my dream meal. I could probably eat this everyday and be happy forever.
Apples are the best work snack. Especially when you haven’t had a moment to get outside for lunch and it’s 2 in the afternoon and you need to eat something before you pass out. Yep. Best.Snack.Ever.
Pineapple Crockpot Shredded Chicken Salad with cranberries, cashews, flax seed with homemade pineapple vinaigrette. A really great salad that I had for lunch. Thank the Big Guy for crockpots because it saves time and lives. It prevents me from starving.
Mixed berry whole grain cobbler with honey and coconut oil. Oh! and a pinch a sea salt. Not as good as the real thing, I won’t lie. This is preliminary for a healthier cobbler. It’s still in the works and if I ever get it “just right”, you’ll be the first to know!
